L'objectif général de l'étude est de simuler les épisodes de contamination de certains bivalves (huîtres et moules) par les toxines d'Alexandrium minutum et A. calenella à partir d'un module expérimental adapté, et en vue de construire un modèle de contamination applicable à ces espèces. Ce modèle sera ensuite susceptible d'être couplé aux modèles biologiques locaux (estuaire de Penzé et étang de Thau) de déterminisme des blooms, ainsi qu'aux modèles hydrodynamiques développés par différentes équipes (Ifremer, Université de Montpellier). La première année (2001-2002) était consacrée à la simulation des contaminations en estuaire de Penzé (Alexandrium minulum) et au développement de cultures en masse d'A. calenella de Thau en bioréacteurs. |

Le laboratoire Génie Alimentaire de l'IFREMER travaille depuis quelques années sur le procédé de fumage en utilisant1 une enceinte climatisée industrielle. Pour optimiser ce procédé afin d'en tirer le meilleur partie pour nos différentes recherches, il est apparu indispensable de modéliser et simuler l'écoulement des particules de fumée. Ce travail nécessite, à la fois, un recherche bibliographique critique très pointue et un travail de simulation avec des outils logiciels (code de calcul CFD) sophistiqués. Ne disposant pas des moyens nécessaires en interne, le laboratoire a donc choisi de contractualisé cette tâche avec l'ENITIAA. |

Starting microalgae continuous culture generally includes a preliminary batch culture to obtain sufficient cell density. It is possible to apply continuous regime from the beginning of the culture (IC mode) rather than to begin by an initial batch (IB mode). It is our purpose to check that both initial modes lead to identical steady-state cell characteristics. The microalga Isochrysis galbana affinis Tahiti was used for this comparative study. This study evaluated the effects of five smoking processes on the contents of 10 major phenolic compounds in fillets of herring (Cuplea harengus), namely two traditional processes, involving smoke production by smouldering or friction, one process using liquid smoke atomisation, and two electrostatic smoking processes, also involving smouldering or friction. The effects of several parameters, such as smoking time, smokehouse temperature, electrode voltage, and fish fillet temperature before smoking were assessed for each process. A simple system was used to simulate the effect of alternating toxic (paralytic shellfish poisoning toxins) and non-toxic microalgal diets on oyster feeding behaviors and rates of toxin accumulation. In October and November 2003 a bloom of the toxic dinoflagellate Alexandrium catenella was observed in the North-east zone of Thau lagoon (French Mediterranean coast). The smoking process is a batch one with long duration processing (some hours). Deposition of smoke particles can be enhanced by electrostatic precipitation. However, a better knowledge of the fundamental physics is needed to optimize the process. We carried out experimental and numerical studies to obtain essential information on the smoke flow. The occurrence of new phytoplankton species in a coastal area may be explained by the import of shellfish containing whole live algal cells in their digestive tracts. Indeed, shellfish containing toxic algal cells can induce both primary contaminations in safe areas ( initially free from toxic microalgae), and secondary contaminations of other shellfish growing in the same area via the faeces of the imported animals. Alginates are natural polysaccharides that are extracted from brown seaweeds and widely used for their rheological properties. The main step in the extraction protocol used in the alginate industry is that of alkaline extraction. A batch process is used for this step, which is time-, water-, and reactant-consuming. The aim of this study was to evaluate the importance of biotransformation of paralytic shellfish toxins during the detoxification process in contaminated oysters. Mathematical models based upon the detoxification patterns of digestive gland and other tissues were developed. It was demonstrated that biotransformations do not seem to play an important role in digestive gland or other tissue detoxification kinetics with our data set.
